Popeyes Louisiana Kitchen fries chicken to a New Orleans recipe, and more than 3,100 US restaurants now sell it. Al Copeland started it in 1972. Popeyes History
Al Copeland opened Chicken on the Run in Arabi, Louisiana in June 1972, and the mild recipe found few takers. He shut it, cut a hotter cayenne blend and reopened days later. The new sign read Popeyes, after Popeye Doyle of The French Connection rather than the spinach-eating sailor. The spicier bird found its audience quickly.
Franchising followed in 1976, and the 500th restaurant opened in 1985. Al Copeland then bet the company on Church’s Chicken, lost the wager and lost the chain with it. AFC Enterprises took both brands over in 1992. Louisiana Kitchen entered the company name in 2014.
Restaurant Brands International bought the chain in March 2017 and set about opening it worldwide. Two years on, one chicken sandwich sold out nationwide within a month and started a public brawl among rivals. Popeyes Louisiana Kitchen counts roughly 5,400 restaurants worldwide, and the United States holds well over half of them. Miami holds the head office today.
